Festive Slaw

4 cups chopped cabbage
1 cup shredded carrots
1/2 cup chopped green onions
1 cup sunflower seeds (without shells)
1 package Ramen Chicken Noodles
1 cup olive oil
2 tablespoons sugar

Mix cabbage, onion, and sunflower seeds. Crunch noodles over cabbage mixture (save the Raman spice envelope). Mix olive oil, sugar, and spice envelope together. When ready to serve pour oil mixture over cabbage mixture and toss completely.

 

Pennsylvania Dutch Easy Filled Cookies

1 cup shortening  
2 cups brown sugar 
2 eggs
1/2 cup buttermilk 
1 tsp. vanilla
3 1/2 cups flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon

Cream shortening and sugar.  Add eggs, milk, and vanilla.  Blend in dry ingredients. I make my buttermilk by adding a touch of vinegar to the milk.
Drop teaspoon on ungreased cookie sheet and make impression in dough.  Place 1/2 tsp.of filling on dough and top w/1/2 tsp. of the dough.
Bake 400 oven for 8 min or 375 for 10 min.  Yield 5-6 dozen.

Filling can be raisin, apricot or date.  Cook dried fruit in water until tender.  The apricot, I puree in food processor.  The raisin, I add a little cornstarch to mixture to thicken.
